The autumn seasonal menu 'Albamsiru' released by Sungsimdang is a product made using 100% Gongju chestnuts. According to the content of the video from the Mat Sangmu YouTube channel, this product is priced at 45,000 won and is characterized by two types of simmered chestnuts that capture the colors of autumn, Mont Blanc style cream, and a generous amount of steamed chestnuts.

'Bonibam simmered' chestnuts provide a more natural taste than smooth peeled chestnuts

Two forms of simmered chestnuts are used in Albamsiru. There are the yellow-colored, smooth 'peeled chestnut simmered' and the brown-colored 'Bonibam simmered'. The video explains that the Bonibam simmered chestnuts are more attractive in terms of texture, aroma, and taste than the peeled chestnut simmered. While the peeled chestnut simmered has a neat and smooth shape, it lacks the natural feeling of the original chestnut, whereas the Bonibam simmered utilizes the color of the chestnut skin (yulpi) to realize a natural taste and texture as if the chestnuts were directly roasted or steamed.

The process of making Bonibam simmered chestnuts is complex. To remove the astringent taste of the skin, they undergo a process of being boiled several times in water containing baking soda. Through this, the astringent taste is removed while preserving the unique color of the chestnut. The video reported that this Bonibam simmered chestnut has a deeper taste than the peeled chestnut, enhancing the flavor of the product.

The presence of Gongju chestnuts is abundant even without compote

The cream is shaped like it is piled up like Mont Blanc mountain. The Mont Blanc cream has a color as if the chestnut skin (yulpi) is slightly included, and it delivers the aroma of chestnuts without any foreign sensation or astringent taste felt in the mouth.
