Black Soybean Salad: How to Remove Fishy Odors with Ginger Steam and Steam Softly
By steaming Seoritae (black soybeans) instead of roasting them before seasoning, you can not only maximize their unique nuttiness but also ensure that people with weak teeth can consume them softly. Removing Fishy Odors with Ginger Steam and Enhancing Texture through Steaming
The first step to making Seoritae soybean salad is to soak the beans sufficiently. After washing 2 cups (300g) of Seoritae thoroughly, soak them for 5 hours and then drain the water. Prepare a steamer, pour 1 liter of water into a pot, and add half a piece of sliced ginger to the water. This is because steaming the Seoritae with ginger steam can remove the unique fishy odor of the beans.
Place the drained Seoritae in the prepared steamer, close the lid, and turn on the gas stove. Once the water begins to boil vigorously, lower the heat to medium and steam for 20 minutes. An important point in the cooking process is not to open the lid immediately after turning off the heat. You must let it sit (steaming/resting) for about 5 minutes for the Seoritae to be steamed deliciously. However, it is important to stick to the appropriate time, as steaming for too long may result in a stale smell.
Seasoning Blend Flavored with Soybean Paste and Rice Syrup
Prepare the seasoning while the Seoritae is cooling. The seasoning uses 1 spoon of soybean paste, 1 spoon of minced garlic, 3 spoons of soup soy sauce, 3 spoons of rice syrup (Jocheong), 2 spoons of perilla oil, and 2 spoons of sesame seeds. The amount of rice syrup can be adjusted to control the sweetness according to personal preference. Mix all the prepared seasoning ingredients to make the sauce.
Pour the well-steamed Seoritae into the seasoning and toss lightly to complete the Seoritae soybean salad. Since this method involves steaming rather than roasting, the beans go down smoothly in the mouth, making it a useful side dish for middle-aged and elderly people looking to care for menopausal health or bone health.
