The YouTube channel 'Simbangol Housewife Korean Food Recipes' introduced a recipe for beef radish greens soup that is cooked every Chuseok holiday. According to the video description, when Chuseok arrives, this meat soup is cooked to eat with family using siraegi (dried radish greens) thinned out from kimchi vegetables. Based on 400g of Hanwoo brisket, the ingredients are 1.5L of water, 1 green onion, 400g of siraegi, 1 piece of ginger, 1.5 spoons of minced garlic, 1/2 spoon of salt, 3 spoons of soup soy sauce, and pepper.

Boil the brisket whole without slicing it

The meat used in the video is Hanwoo top-grade (1++) brisket. The meat is washed thoroughly under running water and squeezed tightly to remove the blood. The method of this recipe is to boil this brisket whole without slicing it, and then shred it into strips to cook. The video adds that the soup is much more delicious when the whole brisket is boiled rather than sliced, although it takes a bit more time.

Pour 1.5L of water and add ginger to boil the meat. In the video, they added steeped ginger syrup, but if you do not have ginger syrup, you can add a few slices of regular ginger. The explanation is that boiling the meat this way prevents the gamey smell and makes the broth clean and delicious. Before it boils, remove the rising foam, boil for about 5 minutes over medium heat, then reduce to low heat and simmer thoroughly for 30 to 40 minutes. The video emphasizes that it must be boiled sufficiently for the flavors to fully come out and be delicious.

Season the radish greens with soup soy sauce and minced garlic and let them soak in the flavor

While the meat is boiling, add 3 spoons of soup soy sauce and minced garlic to the siraegi, mix it well, and let it sit so the seasoning soaks in. The explanation is that the soup is much more delicious if the seasoning is soaked into the greens before adding them, rather than just adding the siraegi as is.

When 40 minutes have passed since boiling the meat, remove the ginger. While the meat is cooling, add the seasoned siraegi to the broth and boil it vigorously over high heat first. Once the meat has cooled completely, shred it into strips by hand. The video stated that shredded meat like this is tastier than sliced meat, and using a knife seems to make it slightly less delicious. Season the shredded meat with salt and add a little minced garlic, mixing it well. Although the order is cumbersome, the explanation is that if you add it to the soup this way, the seasoning soaks into the meat, making it much more delicious.

When the siraegi has boiled sufficiently, add the seasoned meat. Since the meat is already fully cooked, it only needs to boil for 1 to 2 minutes. To finish, add green onion and minced garlic and add pepper to complete the beef radish greens soup. The family in the video said they have been cooking this beef soup every Chuseok with siraegi thinned from kimchi vegetables since before they started YouTube.
