The dressing, which replaces the texture of mayonnaise while adding freshness, uses plain yogurt as the key ingredient. First, boil 5 eggs and separate the whites and yolks. Prepare the whites by dicing them into sizes similar to the fruits and vegetables, and it is important to place the yolks in a small bowl and mash them finely so they do not clump.

Adding 6 tablespoons of unsweetened plain yogurt to this and mixing it thoroughly with the mashed yolks completes a visual similar to mayonnaise. To this, add 1.5 teaspoons of fine salt, 1 tablespoon of lemon juice (or apple cider vinegar), and 2 tablespoons of honey to balance the ratio of sweetness and acidity. The completed dressing is used by mixing it with diced apples, pears, green bell peppers, and paprika. At this time, since blueberries or nuts may get crushed, the tip for maintaining a clean visual is to toss them lightly in the final stage.

All-purpose Dressing Adjusted with Avocado Oil and Milk, and Meal Replacement Methods

There is another dressing recipe that can be used not only for salads but also as a hearty meal replacement. Prepare 2 fully cooked eggs, cut them in half, and make a dressing using the boiled eggs. Season with 2/3 tablespoon of oligosaccharide, 1 teaspoon of mustard sauce, 3 pinches of fine salt, and 3 shakes of pepper. To this, add 4 tablespoons of avocado oil to aid nutrient absorption and enhance the savory flavor. If avocado oil is unavailable, it can be replaced with olive oil.

The key is to adjust the consistency depending on the intended use of the dressing. When enjoying it as a light vegetable-oriented salad, add 2 tablespoons of milk to make the consistency thinner and increase the freshness. On the other hand, when eating it as a meal replacement accompanied by shredded cabbage, steamed potatoes, or apples, it is good to use the thick consistency dressing without adding milk to increase satiety.
