[Chuseok Food Recipes] How to make doraji (balloon flower root) and spinach seasoned vegetables with 'Manmulsang All-Purpose Vegetable Seasoning Sauce'
An all-purpose seasoning sauce flavors doraji (balloon flower root) and spinach namul for Chuseok.
If you find it cumbersome to make a separate seasoning sauce every time you season vegetables, you can use an all-purpose vegetable seasoning sauce.
You can make various seasoned vegetables using Park Hyo-soon's all-purpose vegetable seasoning sauce.
Mix all the ingredients together to make the seasoning sauce. Sand lance fish sauce effectively masks the fishy smell unique to vegetables and enhances umami. Adding a little fish sauce brings out the distinct flavor of the vegetables.
Manmulsang Park Hyo-soon's seasoned vegetables (doraji (balloon flower root) and spinach)
Ingredients: 300g doraji (balloon flower root), 300g spinach, 2 spoons coarse salt, 2 spoons sugar, cooking oil, jjokpa green onions, sesame seeds, all-purpose vegetable seasoning sauce
1. Add 2 spoons of coarse salt, 2 spoons of sugar, and a little water to 300g of doraji (balloon flower root), massage it well, and let it sit for 5 minutes.
(Adding sugar and salt together removes the bitterness of the doraji (balloon flower root) and makes it crunchy)
2. Pour hot water over the doraji (balloon flower root), let it sit for 5 minutes, and then drain the water.
(Pouring hot water perfectly removes the astringent taste)
3. Drizzle cooking oil in a pan, stir-fry the doraji (balloon flower root), then add 2 spoons of the all-purpose vegetable seasoning sauce and stir-fry for 5 minutes.
4. Add jjokpa green onions and sesame seeds, then stir-fry once more (the doraji (balloon flower root) namul is ready).
5. Mix 300g of boiled spinach with 1.5 spoons of the all-purpose vegetable seasoning sauce.
6. Finish by adding jjokpa green onions and whole sesame seeds (the spinach namul is ready).
