Sea urchin roe soup recipe

Main ingredients: 200g sea urchin, 100g hard clams, 150g radish. Sub-ingredients: 130g tofu, 2 shiitake mushrooms, 1/4 onion, 1 tsp salt, 7 cups water, 10cm square kelp.

1. Put water and kelp in a pot and bring to a boil.

2. Once the water boils, turn off the heat, let it steep for 10 minutes, then remove the kelp.

3. Slice the radish into 1.5cm flat pieces, and cut the onion and tofu into 1cm pieces.

4. Remove the stems of the shiitake mushrooms and slice them into 1cm pieces; remove the meat from the hard clams and slice it into 1cm pieces.

5. Add the broth prepared in steps 1–2, along with the radish and shiitake mushrooms, to the pot and bring to a boil.

6. Once the broth boils, add the hard clams and boil.

7. Add the sea urchin roe, onion, and tofu, boil once more, and season with salt to complete the sea urchin roe soup.

8. During step 7, stir occasionally to prevent the sea urchin roe from sticking to the bottom.

To clean sea urchin roe, you must cut the sea urchin in half. Once cut, you will see the yellow sea urchin roe. The black parts are the waste left behind after the sea urchin has eaten.
