How to Make Baek Jong-won's Egg Soup, an Ideal Breakfast Dish

Ingredients: 2 eggs, half a bunch of green onions, half an onion, ground black pepper, 2–3 garlic cloves, 1 tablespoon soup soy sauce, 1 teaspoon salt, 5–6 anchovies, and 1 sheet of dried kelp

Directions

1. Pour water into a pot, add the anchovies and dried kelp, and boil rapidly over high heat for about 5 minutes.

2. Thinly slice the onion, cut the green onions into appropriately sized pieces, and finely mince the garlic.

3. Crack the eggs into a bowl and beat them thoroughly. Using a fork makes it easier to beat the eggs.

4. Add the onion and minced garlic to the stock made with the anchovies and dried kelp. Simmer briefly, then add the soup soy sauce. If it needs more seasoning, add salt to taste.

5. Pour the prepared eggs into the boiling stock. Once the eggs are cooked and float to the surface, sprinkle with the green onions and ground black pepper.

6. Transfer to a serving bowl and enjoy.
