Types and Nutritional Value of Corn and Cheese

Episode 5 of MBC's 'My Little Television' featured Baek Jong-won's corn cheese, which can be made in just five minutes.

Corn cheese is a sweet-tasting dish that combines chewy corn with cheese and is often served as a side dish at sashimi restaurants and other eateries. It can contain several types of cheese, including pizza cheese, sliced cheese, and cheddar, and the added ingredients can be adjusted to taste. Sweet corn cheese also takes just five minutes to prepare, so it does not require lengthy cooking and is considered suitable as a snack with drinks or for children.

Corn is particularly rich in dietary fiber, which may help relieve constipation, and is low in fat. It contains niacin, protein, carbohydrates, beta-carotene, vitamins A, B1, B2, B6, and E, zinc, folate, phosphorus, lipids, iron, potassium, calcium, and ash. Cheese, meanwhile, is made by extracting, coagulating, and fermenting the casein in milk and contains protein, fat, and vitamins. Because cheese can provide the protein that corn lacks, making corn cheese can offer a balanced range of nutrients.

Depending on the production method, varieties include fresh cheese, soft white mold-ripened cheese, washed-rind soft cheese, uncooked pressed cheese, cooked pressed cheese, and goat cheese. Each cheese has a different moisture content, as well as a slightly different taste and flavor. By texture, cheese can be classified as fresh, soft, semi-hard, or hard.

What Makes Baek Jong-won's Corn Cheese Special

Baek Jong-won's sweet corn cheese makes use of leftover 'condensed milk' from making shaved ice in summer. After cooking the corn cheese in a skillet, transfer it to a dish and drizzle condensed milk over it for a soft, sweet texture. When making the corn cheese, adding water after the frying mix also turns the corn mixture into a thick batter. Another distinctive feature of Baek Jong-won's recipe is that it uses frying mix rather than Korean pancake mix.
