Dumpling Soup Introduced by Baek Jong-won

Some time ago, the SBS entertainment program Baek Jong-won's Top 3 Chef King featured a scene in which Baek Jong-won went out for dumpling soup. He visited a restaurant that served spicy dumpling soup. Customers could choose between regular and spicy versions. Since Baek Jong-won does not handle spicy food well, he ordered the regular version.

Baek Jong-won is one of South Korea's leading entrepreneurs and culinary researchers and has recently become well known as a television personality. He currently serves as the CEO of a franchise company and the chair of an educational foundation.

Meat Dumplings, a Favorite Among Many People

Dumpling soup made with dumplings is a popular winter dish. People from Gangwon Province are particularly fond of it, and many even eat dumpling soup instead of rice cake soup on Lunar New Year's Day. Dumplings, the main ingredient in the soup, originated in China and are said to have first been made during the Han dynasty. They were first introduced to Korea during the Goryeo dynasty. Dumplings are fun to make at home and are also readily available at nearby supermarkets. Many varieties can be made depending on the ingredients used in the filling.

Of these, meat dumplings are the type preferred by the most people. Filled with various vegetables and meat, they contain a balanced range of nutrients. Depending on how they are cooked, dumplings can be categorized as steamed, pan-fried, boiled, or served in dumpling soup. To shape a dumpling, thinly rolled dough is cut into a circle, filled with a seasoned mixture, and then formed into a round shape by joining its two ends. This is how dumplings were traditionally shaped in the Gaeseong region, while in the Seoul region they were sealed into a boat shape. Seoul-style dumplings are not commonly used in dumpling soup because their two ends hang down, making them prone to bursting.

How to Make Baek Jong-won's Dumpling Soup

Ingredients: dumplings, Korean zucchini, onion, egg, green onion, brewed soy sauce, soup soy sauce, minced garlic

  1. Sauté the anchovies to remove their fishy odor, then add kelp and pour in water.
  2. Prepare the onion and Korean zucchini, then add them to the pot.
  3. Add brewed soy sauce, soup soy sauce, and minced garlic, then season with salt as needed.
  4. Add the dumplings. Once they are cooked, beat the egg and pour it into the soup.
