Baek Jong-won’s gyeran-mari, in particular, attracted considerable attention because it uses more sugar than conventional versions. Since it is a simple dish, it is also one of the first recipes many people attempt.

Gyeran-mari is widely known as a very simple homemade side dish, but it requires careful choices, from controlling the heat and selecting a frying pan to measuring the ingredients.

Its flavor is known to vary depending on how it is prepared.

A coated pan is generally suitable for making gyeran-mari. If using a stainless steel pan, it must be thoroughly preheated and coated with oil.

One drawback is that it takes a long time to prepare. Here is the perfect recipe for gyeran-mari, a side dish loved by people of all ages.

Ingredients: 5 eggs, onion, carrot, green onion, fine salt, sugar and cooking oil

1. Very finely chop an amount of onion, carrot and green onion equivalent to the volume of one egg. Ham, bacon or other ingredients may be added according to preference.

2. Crack 5 eggs into a bowl and season them. The seasoning must be added before cooking the gyeran-mari.

For 5 eggs, use only 1/2 teaspoon of fine salt and 1/3 teaspoon of sugar.

The amount of sugar may be adjusted to taste. Use less salt if adding ham or bacon.

3. Beat the seasoned eggs. Adding 1–2 drops of vinegar while beating helps the eggs blend more easily.

4. Add the prepared ingredients to the beaten eggs.

5. Coat a frying pan with oil and preheat it over high heat for 1 minute. Once preheated, wait 1 minute, then pour the prepared egg mixture into the pan over low heat.

6. Once the egg mixture begins to set, use a spatula to roll it up tightly.

7. After rolling the egg, pour more egg mixture into the upper part of the pan and continue rolling. Keep shaping the roll with the spatula as you work.

8. Once all the egg mixture has been used, cut the roll into bite-sized pieces and arrange them on a plate.
