On the 10th, cooking researcher Kim Ha-jin presented two everyday side-dish recipes using spring cabbage on MBN’s “Altoran.” The two dishes, which herald the beginning of spring, were spring cabbage fresh kimchi and spring cabbage soybean paste salad. They drew the attention of homemakers who had lost their appetites after the holiday season, so let’s take a look at both recipes.
How to Make Altoran Spring Cabbage Fresh Kimchi
Ingredients: 1 head spring cabbage, 2 tablespoons sesame oil, 1 cucumber, 1 carrot, 1 apple, wild chives, 4 tablespoons anchovy fish sauce, 2 tablespoons red pepper powder, 2 tablespoons minced garlic, 1 tablespoon sugar, 2 tablespoons crushed sesame seeds, 1 piece of pineapple, minced
1. Tear 1 head of spring cabbage along the grain, add 2 tablespoons of sesame oil, and toss.
2. Core the apple and cut it into fan-shaped slices. Slice the cucumber and carrot diagonally.
3. Add the apple, cucumber, carrot, and wild chives, then mix them with the spring cabbage.
4. Make the seasoning sauce by combining the anchovy fish sauce, sugar, minced pineapple, half a cup of water, crushed sesame seeds, minced garlic, and red pepper powder.
5. Add the seasoning sauce to the spring cabbage and toss.
How to Make Altoran Spring Cabbage Soybean Paste Salad
Ingredients: 2 heads spring cabbage, scallions, half a block of tofu, 5 jujubes, 6 tablespoons soybean paste, 1 tablespoon red pepper paste, 1 tablespoon red pepper powder, 3 tablespoons minced garlic, 2 tablespoons sesame oil, 2 tablespoons crushed sesame seeds
1. Place 2 heads of spring cabbage and the scallions stem-first into salted water and blanch for 8 seconds.
2. Rinse the blanched spring cabbage and scallions in cold water, then squeeze them firmly to remove the moisture.
3. Use chopsticks to squeeze the slimy liquid from the blanched scallions.
4. Mash half a block of tofu, then remove the pits from the jujubes and julienne them.
5. Add a seasoning sauce made with soybean paste, red pepper paste, red pepper powder, minced garlic, sesame oil, and crushed sesame seeds, then toss.
