Air Fryer Grilled Mackerel and 'Sumi's Kitchen' Braised Mackerel with Aged Kimchi
Air-fryer grilled mackerel, plus spicy braised mackerel with aged kimchi from 'Sumi's Kitchen.'
However, grilling mackerel can be unappealing because the fishy smell and oily odor tend to fill the entire house. Perhaps for this reason, grilling mackerel in an air fryer has become common. On the show 'Sumi's Kitchen,' grilled bakdae prepared in Guam attracted attention, while braised bakdae had previously been a topic of conversation. Instead of hard-to-find bakdae, how about braised mackerel? Let's look at how to make grilled mackerel in an air fryer and a foolproof recipe for the peppery, spicy braised mackerel from 'Sumi's Kitchen.'
Air Fryer Grilled Mackerel
Cooking mackerel in an air fryer allows you to enjoy a clean-tasting grilled mackerel without the fishy smell. First, place the mackerel in the air fryer with the skin facing up to prevent sticking, then cook at 200°C for about 10 minutes. After that, flip the mackerel and cook for another 10 minutes to complete the air fryer grilled mackerel.

1. Put a little water in a pot. Once it boils, add the aged kimchi whole, pour in enough rice-rinsing water to come partway up the kimchi, and boil.
2. Roughly chop onions, green onions, green chili peppers, and red chili peppers and place them in a bowl.
3. Make the seasoning sauce by mixing 1 tablespoon of minced ginger, 2 tablespoons of coarse chili powder, 1 tablespoon of plum extract, 1 tablespoon of cooking wine, 3 generously filled tablespoons of soy sauce, and an appropriate amount of rice-rinsing water.
4. Remove the tail of the mackerel, cut it in half, and make slits in the body.
5. When the aged kimchi is almost cooked, add the prepared mackerel, vegetables, and the prepared seasoning sauce.
6. Simmer over medium heat so that the seasoning penetrates the mackerel.
7. When it is almost done, sprinkle in 3 tablespoons of coarse chili powder and a little black pepper, then bring it to a boil once more to finish the spicy, peppery, and salty braised mackerel.
