Sumi's Kitchen Foolproof Recipe for Grilled Deodeok Root
Let's look at Kim Su-mi's super simple recipe for making grilled deodeok root easily at home.
Ingredients: deodeok root, sesame oil (Sauce: red chili paste, minced garlic, finely chopped scallions, black sesame seeds, whole sesame seeds, brewed soy sauce, water, sugar, sesame oil, honey)
1. After peeling the deodeok root, soak it in salt water to remove the bitterness.
2. Slice the deodeok root into long strips, then gently pound them with a mallet.
3. Before grilling, apply sesame oil to your hands and coat the deodeok root with it.
4. Before applying the sauce, lightly pre-grill the deodeok root coated in sesame oil over low heat.
5. Make the sauce by mixing 2 tbsp red chili paste, 1/2 tbsp minced garlic, 10 g finely chopped scallions, 1 tsp black sesame seeds, 1 tsp whole sesame seeds, 1/2 tbsp brewed soy sauce, 1 tbsp water, 2 tsp sugar, 1 tsp sesame oil, and a bit of honey.
6. Remove the pre-grilled deodeok root from the pan, apply the sauce, and then grill it.
Be careful not to pound the deodeok root too hard, as it may split or tear. Also, applying too much honey while grilling the deodeok root may cause it to burn.
