How to Make Sweet Chocolate Macarons

As the 'macaron' craze shows no signs of fading, shops using unique ingredients continue to gain popularity. We introduce how to make chocolate macarons, whose name alone brings a sweet taste to your mouth, along with the necessary ingredients.

Chocolate Macaron Ingredients

For the chocolate macaron, you will need 60g egg whites, 53g white sugar, 70g almond powder, 100g powdered sugar, and 15g cocoa powder to make the macaron shells, and 100mL heavy cream, 200g dark chocolate, and 1.25g salt to make the macaron ganache filling.

Making Chocolate Macaron Shells

First, let's make the macaron shells.

1. Mix the almond powder, powdered sugar, and cocoa powder evenly, then sift them.

2. How to make the meringue: Whip the egg whites (60g) with a hand mixer, then add the white sugar in three batches and continue whipping vigorously.

*To ensure a successful macaron, you must make the meringue well. Whip it until the tips curve slightly.

3. Pour the sifted powder into the meringue and perform macaronage by gently deflating the air.

*Macaronage is the process of deflating the meringue bubbles. It is helpful to refer to a macaronage video.

4. Put the prepared batter into a piping bag fitted with a round tip. Line an oven tray with a Teflon sheet and pipe the batter into circles.

*If you place a macaron template pad on the Teflon sheet, you can make the macaron shells in uniform shapes.

5. Tap the oven tray on the counter several times to remove air, and let it air dry at room temperature for 15 to 30 minutes.

*Let the shells dry until no batter comes off when touched with a finger.

6. Bake the dried macaron shells in an oven preheated to 145°C for 6 minutes, then rotate the oven tray and bake for another 6 minutes.

While the shells are baking, let's make the chocolate ganache filling to go between the macaron shells.

1. Add salt to the heavy cream heated to just before boiling.

2. Pour the heavy cream into a bowl containing the chocolate and let it sit for 5 to 10 minutes.

3. Stir carefully with a spatula to completely melt the chocolate, then cover with plastic wrap and refrigerate for 10 minutes.

4. Place the prepared chocolate ganache in a piping bag fitted with a round tip, as you did with the macaron shell batter.

The macaron shells to be sandwiched together and the chocolate ganache filling are now both ready.

While making the macaron filling, transfer the well-baked macaron shells to a moisture-free tray and let them cool sufficiently, then pipe a thick layer of ganache filling on one side of a shell. Place another macaron shell on top to create a sweet macaron.

Making Various Macarons

Making macarons may look simple, but it requires more meticulous work than expected. However, once you become familiar with the basic macaron recipe, you can make various types of macarons besides chocolate.
