Chonggak-kimchi cooking information

Dishes like chonggak-kimchi fried rice, stir-fried chonggak-kimchi, braised chonggak-kimchi, and chonggak-kimchi stew are ways to enjoy chonggak-kimchi differently when you are tired of eating it as a daily side dish. While using well-fermented kimchi is best for flavor, over-fermented kimchi can be very sour; in such cases, you can lightly rinse it with water or add oligosaccharide to neutralize the acidity.
