Sweet and savory galbi-jjim made with a soy sauce marinade and plenty of time: Sumi's galbi-jjim

Galbi-jjim is a braised dish made from cut beef ribs. It is a popular dish because the meat becomes tender and easy to pull off, and it has a sweet and salty flavor. 'Galbi' refers to the ribs. Beef ribs are also called 'gari' and the dish is sometimes called 'gari-jjim.' Since the ends of each rib are rounded and have little meat, they are used to make broth, while the flat parts with plenty of meat are used for braising.

Delicious Galbi-jjim that is perfect to eat in one bite

Because ribs are more expensive than lean meat, Galbi-jjim is considered a high-end dish. Well-made Galbi-jjim features meat that is tender and easy to eat. The more meat a beef rib has, the more fat it contains. If there is too much fat, it can be greasy and unpalatable, so fat clumps are either removed or the meat is boiled once to skim off the fat before the main cooking.

How to make Sumi's Galbi-jjim

Ingredients: Beef ribs, radish, carrot, shiitake mushrooms, cinnamon, dried chili peppers, half a stalk of green onion, egg, one jujube, chestnuts, pine nuts, ginkgo nuts

Seasoning: Soy sauce, pear, ginger, minced garlic, plum extract, oligosaccharide (optional)

Instructions

  1. Soak the ribs in water for about two hours, changing the water to remove blood, and then make incisions in the meat.
  2. Grate the pear, ginger, and garlic, squeeze the juice through a cheesecloth, mix it with soy sauce, and marinate the ribs for about 3 hours.
  3. Trim and cut the radish and carrot, and make incisions in the mushrooms.
  4. Prepare the egg garnish separately. Place the ribs in a pot lined with cinnamon and dried chili peppers, and add enough water to barely cover them.
  5. Season with soy sauce, boil on high heat for 30 to 40 minutes, then add the jujube, radish, carrot, and mushrooms.
  6. When the radish and carrot are nearly cooked, add the chestnuts, pine nuts, and ginkgo nuts, then top with green onions and egg garnish.
