First, let's look at how to make a crepe cake. For the batter ingredients, you will need 2 eggs, 1/8 tsp salt, 15g sugar, 1/4 tsp vanilla extract, 100g cake flour, 150ml milk, 100ml heavy cream, 2 tsp rum, and 20g butter. For decoration, prepare 100ml heavy cream, 15g sugar, and 150g strawberries.

Take the eggs and milk out of the refrigerator and leave them for at least 30 minutes so they reach room temperature. Wash the strawberries thoroughly, pat them dry, and slice them. To make the crepe batter, put the eggs in a bowl and lightly beat them with a whisk. Next, add the salt, sugar, and vanilla extract, and mix well with the whisk. Vanilla extract helps remove the odors of the eggs or flour and enhances the flavor; if you don't have it, you may omit it.

Sift the cake flour into the bowl and mix lightly with a whisk until no flour is visible. Gradually add the milk and heavy cream while mixing evenly with the whisk. Pour the batter onto a pan, spread it thinly, and cook until both sides are golden brown. This completes one crepe.

Put cold heavy cream in a bowl, add sugar, and whip it at the highest setting of a hand mixer until stiff peaks form. If you don't have a hand mixer, use some elbow grease and whisk it vigorously. Spread a thin layer of the whipped cream over a cooked crepe, and then place thin slices of strawberry on top. By stacking these layers, a delicious crepe cake is completed. Depending on your preference, you can add maple syrup, jam, or sugar.

What if it's difficult to make a crepe cake yourself?

When spreading whipped cream on the crepes, using a turntable or spatula makes the job easier. Making a crepe cake is not actually difficult. However, the technique of spreading the batter thinly before cooking is very important, so take care: otherwise, you may end up making ordinary pancakes instead of a crepe cake.
