[Chuseok Holiday Food] How to make Sujeonggwa
Sujeonggwa is a traditional Korean cinnamon-and-ginger drink served cold with dried persimmons and pine nuts.
1. Prepare the ginger by washing it thoroughly and slicing it; cut the whole cinnamon sticks in half and wash them clean.
2. Remove the stems from the dried persimmons and make a slit on one side to flatten them out.
3. Place a walnut in the center of the dried persimmon, roll it up to make a dried persimmon wrap, and cut it into bite-sized pieces.
4. Remove the caps from the pine nuts and wipe them with a cheesecloth.
5. Pour ginger and water into a pot, boil over high heat, then lower to medium heat and simmer for about an hour before straining through a cheesecloth.
6. Pour the cinnamon sticks and water into a pot and heat over high heat for about 10 minutes. Once the mixture comes to a boil, reduce to medium heat and simmer for about an hour, then strain through cheesecloth.
7. Combine the ginger water and cinnamon water in a pot, add brown sugar and white sugar, and heat over high heat. When the mixture comes to a boil after about 11 minutes, reduce to medium heat and simmer for about 10 minutes; let it cool, then add the dried persimmon wraps and pine nuts.
