Ingredients: napa cabbage, scallions, garlic, ginger, red pepper powder, shrimp powder, salt, sugar, ground sesame seeds, sesame oil

1. Cut the napa cabbage in half lengthwise, then cut it into 5 cm pieces. Sprinkle with coarse salt and let it sit until wilted.

2. Rinse the cabbage in cold water, then drain it.

3. Cut the scallions into bite-sized pieces.

4. Place the cabbage in a bowl and toss it with red pepper powder to give it color.

5. Add the garlic, ginger, shrimp powder, ground sesame seeds, sesame oil, and scallions to the seasoned cabbage, then mix well. Check the color and add more red pepper powder if needed.

6. Transfer to a plate and serve.

Napa cabbage geotjeori has a shorter shelf life than regular napa cabbage kimchi. Because it may release water and spoil if stored too long, it is best eaten as soon as possible.
