Ingredients needed are glass noodles (starch noodles), spinach, beef, onion, carrot, soy sauce, shiitake mushrooms, soybean oil, green onion, sugar, sesame oil, wood ear mushrooms, pork, garlic, sesame seeds, and pepper. The cooking process is as follows: Shred the beef, pork, and shiitake mushrooms, then marinate them in soy sauce, sesame oil, minced garlic, pepper, and sugar. Slice the onion and carrot into strips. Soak the wood ear mushrooms in water. Sauté the onion, carrot, meat, and mushrooms separately. After boiling the glass noodles (starch noodles), sauté them in a heated pan with oil. Season with soy sauce, sugar, and garlic to add flavor and color. Add all the prepared ingredients to the sautéed glass noodles (starch noodles) and mix well to complete.

To make tteok-japchae using garaetteok, you need garaetteok, beef, minari (Oenanthe javanica; water dropwort), carrot, red chili pepper, minced garlic, sesame oil, black pepper, salt, cooking oil, sugar, and eggs. If the garaetteok is too hard, blanch it in boiling water, then cut it into pieces 4cm long and 0.5cm thick. Shred the beef into pieces 5cm long and 0.7cm thick, and marinate it in beef seasoning. Prepare the minari (Oenanthe javanica; water dropwort) by cleaning and cutting it into 4cm lengths.

Slice the carrot into 4cm lengths and 0.3cm thickness, blanch it in boiling water with salt, rinse in cold water, and remove moisture. Shred the red chili pepper to the same size as the carrot. Make egg strips by frying egg whites and yolks separately. Heat cooking oil in a frying pan, sauté the marinated beef, then add the garaetteok and sauté. Add the carrot, minari (Oenanthe javanica; water dropwort), red chili pepper, minced garlic, and sugar, then sauté. Finally, add sesame oil and black pepper, then turn off the heat. Place the tteok-japchae on a plate and top with the egg strips.
Baek Jong-won's Golden Japchae Recipe
The golden japchae recipe introduced by famous broadcaster and restaurateur Baek Jong-won on a TV program is as follows. Ingredients include carrots, onion, green onion, shiitake mushrooms, wood ear mushrooms, glass noodles (starch noodles), cooking oil, sesame oil, minced garlic, sugar, sesame salt, pepper, and all-purpose soy sauce. First, soak the glass noodles (starch noodles). Prepare an amount equivalent to two cups using a cup ramen container.
While soaking the glass noodles (starch noodles), prepare the remaining ingredients. Prepare 1 cup of carrot, 1 cup of green onion, 2 cups of onion, 1 cup of shiitake mushrooms, and 1 cup of oyster mushrooms. Shred all the vegetables. Once the ingredients are ready, pour half a cup of oil (based on a soju cup) into the pan and sauté only about half of the green onion first. Add the onion, mushrooms, and carrot, and season with pepper. Sauté moderately so the vegetables do not lose their texture, then set them aside in a bowl.
Add the remaining green onion, sesame oil, minced garlic, and sugar. Add the all-purpose soy sauce and bring to a boil. Boil the seasoning until the sugar is well dissolved, then add the pre-soaked glass noodles (starch noodles) and mix well. Once the glass noodles (starch noodles) absorb the seasoning, add the sautéed vegetables and stir-fry them together. Finish by drizzling sesame oil and adding sesame seeds.
