How to Make Aglio e Olio Faster Than Instant Noodles
Two quick aglio e olio recipes pair pasta with garlic, olive oil and chili peppers, with optional shrimp, bacon or cheese.
However, because the sauce contains few other ingredients, olive oil is essential for achieving the proper flavor, rather than canola oil, grapeseed oil, cooking oil, or another oil you may have at home.
*Ingredients: pasta, minced garlic, chili peppers (Cheongyang chili peppers, red chili peppers, peperoncino, etc.), white wine (cheongju), olive oil, salt, pepper, parsley flakes
1. Boil the pasta for 7 minutes in boiling water with a little salt.
2. While the pasta cooks, add olive oil and minced garlic to a heated pan and sauté until the garlic turns golden.
3. Add white wine or cheongju and let it cook briefly, then add the finely chopped chili peppers and sauté.
4. Add the cooked pasta, season with salt and pepper, and continue sautéing.
5. Finish by sprinkling with parsley flakes.
TIP) For a different flavor, sauté cocktail shrimp or bacon in step 3, or top the finished aglio e olio pasta with cheese.
1. Once the water boils, add salt and cook the pasta, reserving the pasta water separately.
2. Thinly slice the garlic and tear the chili peppers into small pieces to release more flavor.
3. Generously coat a pan with olive oil.
4. Add the sliced garlic, chili peppers, and minced garlic. When the oil sauce begins to simmer, reduce the heat and add the pasta.
5. Season with salt and sauté, then add two ladlefuls of pasta water and continue sautéing until thickened.
6. Transfer to a plate and arrange for serving.
