For the japchae sauce, you will need ▲brewed soy sauce ▲kelp stock ▲sugar ▲onion juice ▲pear juice ▲cooking wine ▲pepper and more.
2. Mix brewed soy sauce, sugar, onion juice, pear juice, cooking wine, and ground pepper into one cup of kelp stock. It is also best to add grated garlic at this stage.
3. Add the prepared sauce, sesame oil, and ground pepper to the meat prepared for the japchae, then marinate it for about 30 minutes.
4. Soak the glass noodles in cold water for 30 minutes.
5. Add cooking oil to a frying pan. When the carrot is about halfway cooked, add the onion and bell pepper and stir-fry again. Cook until the vegetables are tender-crisp, then transfer them to a bowl.
6. Blanch the soaked glass noodles for 2 minutes in water with 1 spoonful of salt, then drain them. Do not rinse them in cold water.
7. Add cooking oil to a frying pan and quickly stir-fry the meat, then add the mushrooms and continue stir-frying.
8. Once the meat and mushrooms are cooked, add the remaining vegetables and stir-fry for about 1 minute. Add the glass noodles and sauce, then mix everything together.
9. Finish the japchae with a light drizzle of sesame oil and a sprinkle of whole sesame seeds.
