How to make 'Altoran' Garlic Pickles
Ingredients: Peeled garlic, ginger, pickling brine (6 cups water, 1.5 cups salt), water, vinegar, sugar, soju
1. Thoroughly wash the new-season garlic that has been dried at room temperature, then trim off the stems.
2. Peel the ginger and slice it thinly.
3. To make the garlic pickling liquid, mix 6 cups of water and 1.5 cups of salt well.
4. Place the garlic and ginger in a glass jar sterilized with boiling water and pour in the pickling brine.
5. Close the lid and let it mature for about a day.
6. Make a sweet vinegar solution by adding 1.5 cups of water, 2.5 cups of vinegar, 1 cup of sugar, and 1 cup of soju.
7. Drain the garlic and ginger using a sieve to remove moisture, then pour in the sweet vinegar solution following the same method.
How to make Garlic Scape Pickles
Ingredients: Garlic scapes, soy sauce, vinegar, cooking wine, etc.
1. Wash the garlic scapes thoroughly under running water and cut them into bite-sized pieces.
2. Sterilize the glass jar for the pickles with boiling water and remove moisture.
3. Layer the sliced garlic scapes neatly into the glass jar.
4. Pour in soy sauce, vinegar, and cooking wine in a 1:1:1 ratio.
5. After maturing at room temperature for about two days, store in a cool place or the refrigerator.
