Nutrient-rich seaweed can be served in soup or vinegar salad; this onion salad recipe also uses carrot, wild chives, vinegar, chili, and sesame.

How to eat seaweed
The most representative way to eat seaweed is seaweed soup (miyeok-guk). Seaweed soup varies widely, from beef seaweed soup to versions made with seafood such as blue crab, oysters, sea urchin, bugeo (dried Alaska pollock), and flounder, as well as simple versions made with just seaweed and soy sauce. In addition to seaweed soup, it can be used to make cold seaweed cucumber soup or seaweed vinegar salad.
Water to remove spiciness: 4 cups water, 3 tbsp double-strength vinegar, 2 tbsp sugar
Seasoning: 2 tbsp red chili powder, 2 tbsp anchovy fish sauce, 4 tbsp double-strength vinegar, 1 tbsp sugar, 3 tbsp ground sesame seeds
1. Julienne 400g of onion.
2. Mix 4 cups of water, 3 tbsp of double-strength vinegar, and 2 tbsp of sugar. Soak the 400g of onion in this mixture for 10 minutes to remove the spiciness.
3. Soak 20g of dried seaweed in cold water for 5 minutes. After 5 minutes, rinse it gently while shaking, then squeeze out the excess water.
4. Cut the seaweed into bite-sized pieces and drain the onions using a sieve.
5. Combine the drained onions, the soaked seaweed, 40g of thinly sliced carrots, and 50g of wild chives cut into 5–6cm lengths, then mix gently.
6. Add 2 tbsp of red chili powder, 2 tbsp of anchovy fish sauce, 4 tbsp of double-strength vinegar, 1 tbsp of sugar, and 3 tbsp of ground sesame seeds, then toss gently so the seasoning is evenly distributed.
