Make Korean gochujang-marinated samgyeopsal and hearty samgyeopsal gimbap at home with these step-by-step recipes.

1. Julienne 1 onion.
2. Slice 2 stalks of green onion, the red chili pepper, and the Cheongyang chili pepper diagonally.
3. Make the marinade by combining 1/2 tablespoon minced ginger, 1 tablespoon maesil extract, 1 tablespoon minced garlic, 3 heaping tablespoons gochujang, 2 tablespoons water, and 1 tablespoon brewed soy sauce.
4. Add the marinade and sliced vegetables to 2 geun (about 1.2 kg or 2.6 lb) of samgyeopsal and mix well.
5. Stir-fry the marinated samgyeopsal in a pan.
6. Sprinkle generously with whole sesame seeds.

1. Season the samgyeopsal with black pepper and grill it.
2. Drain the fat from the grilled samgyeopsal and cut it lengthwise.
3. Julienne the carrot into thin strips.
4. Add oil and stir-fry the carrot. Add a pinch of salt at this point.
5. Cut the crunchy green pepper in half lengthwise.
6. Add perilla oil, sesame seeds, and salt to the rice and mix.
7. Spread the rice over a sheet of gim, then add 2 lettuce leaves, 2 perilla leaves, the crunchy green pepper, and pickled radish wraps.
8. Add the carrot and two strips of samgyeopsal.
9. Add the ssamjang and roll up the gim.
