1. Cut off the thick stem portions of the amaranth, then cut the greens into 5–6 cm lengths.
2. Add an appropriate amount of salt to boiling water and lightly blanch the prepared amaranth over high heat for 5–7 seconds.
3. Remove the blanched amaranth and rinse it twice in cold water.

4. Press firmly with your hands to squeeze out the moisture.
5. For the amaranth seasoning, add 3 tbsp soybean paste, 2 tbsp minced green onion, 1.5 tbsp minced garlic, and 2 tbsp peanut butter.
