How to make oyster pancakes 'Sumi's Kitchen' style
1. Wash the oysters by shaking them in saltwater, then drain the moisture.
2. Beat the eggs in advance.
3. Put flour in a plastic bag, add the oysters, and shake. Note that only a small amount of flour should be used.
4. Prepare a garnish using garland chrysanthemum greens.
5. Place the flour-coated oysters in the egg wash and coat them.
6. Pour oil into a frying pan and fry.
The sauce to dip the oyster pancakes in is made by squeezing lemon juice into soy sauce. This is because the lemon helps eliminate the fishy smell of the oysters.

Ingredients: 1 cup oysters, 2 eggs, pancake powder, cooking oil, 1 red chili pepper, salt
1. Wash the oysters by shaking them with a little water and salt using a spoon or chopsticks.
2. Rinse off any impurities under running water and drain them in a sieve.
3. Place the drained oysters in a bowl and coat them evenly with pancake powder.
4. Push the oysters to one side and add 2 eggs to the empty space.

How to wash oysters
When purchasing raw oysters, they are usually submerged in seawater rather than plain water. Since they have not been cleaned yet, debris, impurities, and shells from the seawater are still present, so cleaning is essential.
For 1 cup of raw oysters, prepare 0.5 to 0.7 spoons of coarse salt and 1 to 2 spoons of grated radish.
Place the oysters in a bowl, add a little water and coarse salt, and wash by mixing them. At this time, you must never rub or knead them with your hands. If they come into contact with warm hands, freshness may decrease and the soft oysters may be crushed. After washing the oysters, place them in a sieve to drain the moisture.
Additionally, washing them with juice from grated radish and letting them sit for 2 to 3 minutes cleans them more thoroughly than plain water and can also eliminate the oysters’ fishy smell.
